I’m a pizza addict. I finally got around to making a cauliflower crust homemade pizza. Now I can enjoy pizza that is bursting with flavor, but not necessarily calories and all of the stuff that puts me into a food coma after a slice. I must admit, the “cauliflower crust” is so delicious that you could probably just eat it on its own, but topping it with marinara sauce, feta cheese, olives, fresh tomatoes and fresh basil really makes this dish a winner.
I cooked it in my cast iron skillet, which made the crust nice and crispy. Plus, it helped me easily shape the pizza. I made this entire pizza, start to finish this morning, and you can watch me on SnapChat (FoodieInNewYork) for the next 20 hours or so! This dish is super simple; although, you should pay close attention to the high water content of the cauliflower and make sure you ring as much water out as possible. The more water you ring out, the better chance that your faux “crust” will hold together. If it falls apart, just grab a fork and dig in, because this pizza is still delicious!
- One small head of cauliflower
- 1 egg
- ½ cup parmesan cheese
- ¼ cup Greek yogurt
- 1 teaspoon Italian seasoning or oregano
- ½ salt
- marinara sauce (about ⅓ of a jar)
- 1 large tomato, sliced
- feta cheese, crumbled (about 1 cup)
- olives, pitted and chopped
- fresh basil
- Preheat the oven to 400F. Prepare a 10-12 inch cast iron skillet. Wash and dry the cauliflower. Chop into pieces and put into your food processor. Process until it is resembles coarse grounds. Remove from food processor and measure 3 cups.
- Put the processed cauliflower in a clean dish towel and ring the towel until all of the moisture has been removed. Place the dry cauliflower in a large bowl.
- Add an egg, ½ cup parmesan cheese, ¼ cup Greek yogurt, 1 teaspoon of Italian seasoning or oregano, and ½ teaspoon salt to the cauliflower. Stir until thoroughly combined. Press the "crust" into a seasoned cast iron skillet and bake until it is set and starting to brown (35-40 minutes).
- Once the crust has started to brown, remove from the oven. Add the marina sauce, feta cheese, sliced tomato, fresh basil, and chopped olives. Return to the oven for an additional 5-10 minutes.
- Remove from the oven and let the pizza cool in its pan for about 5 minutes. Carefully cut and serve. (The crust is not as stiff as typical pizza, so be very careful when removing it from the pan.)
